Apricot Jam or Jelly

Ingredients
 4 cups Fresh or Canned Apricots (that have been peeled and diced with the stone removed )
 1 ½ cups Cane Sugar
 2 cups Fresh Lemon or Orange Juice
Instructions

Take a large pot and add the ingredients.

Allow the ingredients to Simmer on medium heat for 25-30 minutes.

Be sure to stir occasionally.

Allow the mixture to cook on a low simmer; it should not come to a rapid boil.

You can mash the fruit with the back of a wooden spoon.

Allow it to cook, as the fruit will be easier to mash.

Continue to mash until smooth, or leave small chunks of fruit if you prefer that consistency.

Allow the jam to cool at room temperature.

Can the fruit in a water bath Or spoon it into a clean, sealable jar.

Store in the fridge. This can be kept for up to 1 week.
